Memorial Day

I really hate hearing people say "Happy Memorial Day." What's happy about it? I mean, I guess there's one aspect that can be happy, having the serviceman/woman actually come home; but in all honesty what's happy about losing a serviceman/woman? Patrick and I cracked a cold one open today in memory of his fallen brothers from Pedro 66 and Extortion 17. The long weekend wasn't just a time to hit the beach or barbeque, it was also a time to remember those who have given all and their families.

Our whole weekend was lovely! Saturday was my last day of work and Sunday Patrick went spear fishing. He came home with a story about a chaotic encounter with TWO, count 'em TWO, bull sharks. Apparently they were fighting each other and all of the fish and sea animals were frantically scurrying the area trying to get away. That, makes me glad I decided not to go diving! We had fantastic Spadefishtacos and have Grouper and Amberjack in the fridge.

Today we took Jack on a bike/run and cooked garlic basil sirloin burgers. Tasty tasty!

my house smells amazing!

Tonight I'm making boeuf bourguignon for one, accompanied by a glass of pinot noir. I walked outside to water my herbs and opened the door to the house and almost died when I smelled what was cooking. Mmmm! Still have an hour to let it simmer, can't wait. It looks like it's going to rain within the next hour or so. Love summer rain.

Yesterday was fantastic. Spent the majority of the day at Crab Island, not a cloud in the sky. There were hundreds of people there, tons of booze, great company, and the water was bluer than I have ever seen it! I went on my first stand-up-paddle board and I was surprisingly good. I guess surfing in Jacksonville all those years paid off. Even when I had had a few drinks in me, I could still balance exceptionally well. Pictures below! Overall my weekend was lovely and I'm excited for what's on the menu this week.

I love Saturday

I love today! Woke up with my hubby next to me which always makes the day good. Then we ate breakfast together and I took Jack for a long walk while he stayed home and read Facing Death in Cambodia. The author of that book, Peter Maguire actually mailed us a signed copy which is pretty badass.

Anyways, Jack and I walk this same road at least three times a week, and each time he remains blissfully unaware of the surrounding world because, well, he's a dog and is usually focused on trying to find a stick or sniff stuff. Well I thought it would be funny to show him a little mouse that was off in the distance (never thinking he would actually do what he did) to see what he would do. HE TOOK OFF, hauling ass after this little mouse, and then catches it in his mouth! The mouse wriggles free and Jack continues to harass it into a huge jungle of saw palmetto bushes. Pretty much the funniest thing I've ever seen him do and I was bummed that Patrick missed it because he always complains that Jack doesn't do "dog stuff." The mouse was unharmed!
Thursday 5/17/2012. The neighborhood turtle.

Yesterday was fun too. Patrick got home from work early after being busy with courses for the past two weeks. Then we did ear candles! Crazy right? Well neither of us had ever done it and thought it'd be fun. Overall I think it's a joke, or we both just have really clean ears because nothing came out. Exhibit A is below :)
Then we had awesome mesquite flank steak for dinner with sweet potato and  lemon-mint green beans. After that we saw the Avengers which was pretty good considering I'm not even into super hero crap.  

 That all leads up to what happened in the last hour, let's see. I made awesome flank steak quesadillas with roasted kale and chipotle-cumin sauce. Speaking of which, I can currently hear Patrick crunching on tortilla chips and dip while I sit here listening to Michael Buble.

I am so excited! I've never tried rhubarb before but have always been intrigued so I decided to make a rhubarb-apple crumble. I'd imagined that rhubarb would taste like celery. It was a snap to make, just chopped up some golden delicious apples, three rhubarb stalks, mixed it with white sugar, brown sugar, oats, cinnamon and a little bit of butter and threw that baby in the oven. Plus it's pretty to look at too. I also learned that the leaves of rhubarb are poisonous.  

The verdict on my rhubarb-apple crumble is: DELICIOUS!
For dinner I made stuffed zucchini, mm! Patrick normally doesn't like squash but he liked these! I even heard him saying "mmm," when I walked into the kitchen. I found the recipe here.. I changed mine up a bit and eliminated half of the zucchini mixture because it seemed too watery. I added pecorino romano to the top, these were so good!

Today was eventful! Patrick and I took Jack for a 5k and it was way too hot outside for bud already. Plus there were tons of gnats and it was really humid, but overall it was fun, and we saw a few turtles too. 

For lunch I had a strawberry and spinach salad and while Patrick napped I worked on my personal trainer stuff. Dinner was my favorite part of the day! It was a delicious chicken piccata with lemon, garlic, chardonnay and capers, served over whole wheat penne and roasted asparagus sprinkled with pecorino romano cheese.  Muy delicioso.

75 degrees, mostly cloudy

Yesterday was a good day. Jack and I went on a nice three mile walk where he carried a stick the majority of the way, got a much needed pedicure, enjoyed a lime margarita with a sangria topper and spent the evening with my love. 

Dinner was Pasta E Fagioli with garlic bread, red white and white chocolate macadamia nut cookies for dessert. I think classic Pasta E Fagiloi is usually made with sausage however, I am not a fan of sausage in the slightest so I just used extremely lean ground beef.

Today is work which I am not all that disappointed about, mainly because it's supposed to rain so I won't be wasting a pretty day working.

Oh, and in case anyone is wondering about the title... I always told everyone I was going to write a book called These Things Don't Happen to Normal People, however, I don't have time so isn't a blog kind of like a book?
